SOUTHWEST COWBOY BEANS Recipe image

Number Of Ingredients 21

1 lb. ground beef
1 lbs. dried pinto beans, soaked per
pkg directions, and rinsed
2 large dried ancho chili peppers
1 can (14.5 oz) Fire Roasted Diced
Tomatoes
1 Medium Red Onion, diced
1 Medium Red Bell Pepper, diced
1 Poblano Pepper, seeded/diced
2 Tbs Garlic, chopped
2 Tbs Chipotle Chili Pepper in Adobo
Sauce, chopped
1 Tbs Cumin
2.5 Tbs Chili Powder
.5 Tbs Crushed Red Pepper
1 Tbs Salt
1/4 cup Worcestershire
1/2 cup Catsup
1 cup strong brewed coffee
1/4 cup Cider Vinegar
1/4 cup brown sugar

Steps:

  • Soak ancho chili peppers in hot water X 15 minutes; drain and chopped. Add all ingredients in slow cooker. Cook on hi X 8-10 hrs. Depending on your cooker, it may take longer or shorter for the beans to soften. After 6 hrs, start checking every hour unless you have cooked these type beans before in your cooker.
