Slow Cooker Creole Style Purple Hull Peas image

I have fond memories of shelling purple hull peas with my Aunt April and my cousins. Now I buy them at the farmers market or frozen, but I still think about those warm days on my aunt's back porch. Field peas or black-eyed peas can be used instead of purple hulls.

Number Of Ingredients 10

1/4 lb smoked sausage
1/2 c onion, chopped
1/2 c celery, chopped
1/2 c bell pepper, chopped
1 clove garlic, minced
1 medium tomato, peeled and diced
3 c purple hull peas or black-eyed peas
2 1/2 c chicken broth
salt and pepper, to taste
tabasco sauce, to taste

Steps:

  • 1. Heat a medium, nonstick pan over medium heat. Add smoked sausage and cook until lightly browned. Drain on a paper towel. Reduce the heat to medium-low, add the onion, bell pepper and celery into the pan and sauté until softened. Add garlic and cook for another minute (don't brown it). Scrape into a 4 or 6 quart slow cooker.
  • 2. Add bacon, tomatoes, peas, and chicken broth to slow cooker. Cover and cook on high for 6 hours or until beans are tender. Taste and adjust seasoning as needed.
  • 3. Suggestion:Use a pound of sliced sausage and serve it over rice for a main dish. Don't forget the cornbread!

I'm a big fan of purple hull peas, and this recipe is one of my favorites. The slow cooker makes it so easy, and the peas always come out so tender and flavorful. I usually serve them with cornbread and a side of collard greens.

I've made this recipe several times now, and it's always a hit. The peas are always tender and flavorful, and the Creole seasoning is perfect. I usually serve them over rice, but I've also tried them over grits and they were just as good.
