Single-Serve Microwave Muffin image

Okay, so this may not be *exactly* like a muffin, but it's pretty close, and was still pretty tasty! The taste and texture turned out to be a little more like that of a very thick pancake, but that's close enough, right? ;) Anyway, I was wanting just one muffin this morning, and decided to tinker around a little and make just one in the microwave. I'll probably play around with this a little more, but here are the basics. Really, you could probably add fruit or chocolate chips or whatever to this, and have yourself a tasty little treat in roughly five minutes. I'd love to hear other people's ideas on additions/changes to this!

Time 5m

Yield 1 muffin, 1 serving(s)

Number Of Ingredients 8

2 tablespoons whole wheat flour
1/4 teaspoon baking powder
1/2 teaspoon cinnamon
1/8 teaspoon flax seed meal
1 teaspoon brown sugar
1/2 teaspoon canola oil
2 tablespoons skim milk
2 teaspoons unsweetened applesauce

Steps:

  • In microwavable coffee mug, ramekin, or custard dish, combine flour, baking powder, cinnamon, and flax meal (I used a custard dish).
  • In another coffee mug (etc), mix brown sugar, oil, milk, and applesauce.
  • Pour wet ingredients into dry, and mix thoroughly.
  • Microwave on MEDIUM power for 2 minutes (cooking time may be different with different microwaves; 2 minutes is just what worked for me).
  • Muffin will be done when toothpick inserted near middle comes out clean.
  • I put some applesauce on top and just ate it with a spoon right out of the custard dish.

I'm a single guy and I don't like to cook. This muffin is perfect for me because it's a single serving and I can make it in my microwave.

I'm a college student and I don't have access to a full kitchen. This muffin is perfect for me because I can make it in my dorm room microwave.

This muffin is a great way to use up leftover pancake mix. I always have a box of pancake mix in my pantry, so it's nice to have a recipe that I can use it for besides pancakes.

I made this muffin in a silicone muffin cup instead of a mug. It worked perfectly and the muffin came out nice and evenly cooked.

I'm allergic to chocolate, so I substituted blueberries instead. The muffin still turned out great! The blueberries added a nice tartness that balanced out the sweetness of the muffin.

This recipe is missing some important details. It doesn't say what size mug to use or how long to microwave the muffin. I had to guess and check, which was frustrating.

I followed the recipe exactly, but my muffin didn't turn out as well as the picture. It was a little dry and the chocolate chips were all sunk to the bottom. I'm not sure what I did wrong.

This muffin was just okay. It wasn't bad, but it wasn't anything special either. I think I'll stick to my regular muffin recipe next time.

I was pleasantly surprised by how well this muffin turned out. I wasn't expecting much from a microwave muffin, but it was actually really good. It was moist and flavorful, and the chocolate chips were a nice touch.

I've tried many mug muffin recipes before, but this one is by far the best. It's so moist and fluffy, and the chocolate chips add the perfect amount of sweetness. I'll definitely be making this again soon!
