Shipwreck Dinner, One Dish Meal, Mom's image

This was a recipe Mom took to potluck dinners. Its made in layers and the flavors blend as it cooks.

Categories     Beef

Time 2h10m

Number Of Ingredients 10

1 lb ground beef
1-2 clove garlic, minced
1 large onion, chopped
2 medium potatoes, washed but not peeled, then sliced
1 c uncooked rice
1 c diced celery
2 c kidney beans, drained
2 c stewed tomatoes, drained
1 c juice drained from tomatoes
salt and pepper to taste

Steps:

  • 1. Lightly brown beef in skillet with garlic, drain, and add salt, pepper and some Worchestershire sauce to it. Beef should still be rare as it will continue to cook in the oven.
  • 2. In a large casserole dish layer onion, then potatoes. Sprinkle some salt and pepper on potato layer. Add ground beef. Make the next layer rice, then celery, then kidney beans, tomatoes, and finally tomato juice. Add some more salt and pepper if desired. Bake at 350 degrees for 2 hours.

I'm not a fan of canned soup, but this recipe was surprisingly good. I'll definitely be making it again.

This recipe was a bit too salty for my taste. I think I'll use less soy sauce next time.

I'm not a huge fan of one-dish meals, but this one was surprisingly good. The flavors were well-balanced and the chicken was cooked perfectly. I'll definitely be making this again.
