This is my personal favorite and I have never had any complaints.

Categories     Meatloafs

Time 1h15m

Number Of Ingredients 9

2 large eggs
1 pkg lipton onion soup mix
1 lb 80/20 hamburger meat
1 can(s) rotel original
1/2 pkg crumbled ritz crackers
1/4 c ketchup
1 tsp worcestershire sauce
1/2 c green bell pepper finely chopped
1/8 tsp salt and pepper

Steps:

  • 1. Heat oven to 350 degree
  • 2. Combine all ingredients in bowl and spray meatloaf pan with cooking spray
  • 3. place ingredients in pan and cook in the oven for 45 minutes to an hour or until you feel it is done. I cook until the center is not pink and I drain the fat half way through cooking. Do not let meatloaf sit in the grease after you take it out of the oven, remove from pan and drippings.
  • 4. Serve with mashed potatoes, brown gravy and carrots or asparagus, or any other vegetable and cornbread. This recipe is to die for!
  • 5. You can top with Ketchup or tomato sauce for the last 10 minutes of cooking if you prefer.

This meatloaf was a bit too dry for my taste, but the flavor was good. I think I'll try adding some more moisture to the mixture next time.

I followed the recipe exactly, but my meatloaf didn't turn out as good as I hoped. It was a bit bland and lacked flavor. I'm not sure what went wrong.
