SEVEN-MINUTE FROSTING (GRANDMA'S) image

Number Of Ingredients 5

1 egg white, unbeaten
3/4 cup sugar, finely sifted
2 tablespoons cold water
1/4 tsp cream of tartar or 1 tsp light corn sirup
Few grains salt

Steps:

  • Combine ingredients in top of double boiler. Stir until sugar dissolves, then place over briskly boiling water. Beat with egg beater until stiff enough to stand up in peaks (6 to 10 minutes). Flavor as desired. Beat until thick enough to spread. During cooking, keep sides of double boiler cleaned down with spatula. With an electric beater the process may take as little as 4 minutes. Use with any of the variations suggested under Boiled Frosting (p. 654). For top of 1 cake or 1 dozen cup cakes. Make double recipe if for filling as well. *** Chocolate Frosting: Add 1 1/2 squares chocolate, melted or grated, as soon as sirup is added to egg whites. Orange Frosting: Add 1/4 cup chopped candied orange peel.
