SESAME SHRIMP AND ASPARAGUS WITH ANGEL HAIR PASTA image

Number Of Ingredients 9

1 lb. Angel Hair Pasta, cooked al dente
1 lb. Shrimp, peeled
1 lb. Asperagus, peeled
2 clove Garlic, minced
2 tsp. Ginger, grated
1 Tbs. Sesame Oil
1 Jalapeno Chile, minced
1 Tbs. Sesame Seeds, toasted
2 Tbs. Canola Oil

Steps:

  • Over medium-high heat, bring a large pot of salted water to a boil. Add the Asparagus and cook until crisp-tender, about 4-5 minutes. Remove Asparagus and refresh with cold water. Keep pot of water boiling. Cut-off the Asparagus tips and reserve. Cut the Asparagus stalks into 1" pieces, diagonally. Reheat the Angel Hair in the boiling water, about 1-2 minutes. Drain the Angel Hair and transfer to a large bowl. Toss with 1 tablespoon of the Canola Oil. In a large saute pan over medium-high heat, heat the remaining Canola Oil. Add the Garlic and Ginger and, stirring constantly, cook until fragrant, about 30 seconds. Add the Shrimp and cook, stirring frequently, until pink, about 3 minutes. Add the Jalapeno and cut Asparagus. Saute until warmed, about 1 minute. Add the drained Angel Hair and cook, gently tossing the pasta, until warmed, about 2-3 minutes. Add the Sesame Oil and toss to combine. Transfer to a large serving bowl and garnish with the Asparagus tips and Sesame Seeds.
