Coffee Walnut Muffins image

A great muffin to go with your morning coffee or tea.

cooking spray to grease muffin tin or use muffin tin liners
2 c all-purpose flour
1 Tbsp baking powder
2 Tbsp espresso powder
1 tsp cinnamon
3/4 c sugar
1 c milk
1/3 c canola oil
2 tsp vanilla extract
3/4 c chopped walnuts
TOPPING
1/4 c finely chopped walnuts
2 Tbsp packed brown sugar

Steps:

  • 1. Preheat oven to 350 degrees. Lightly grease muffin tin or place 12 muffin cup liners in a muffin pan.
  • 2. Sift together the flour, baking powder, espresso powder, cinnamon in a large bowl and stir in the granulated sugar.
  • 3. Whisk together the milk, oil, and vanilla extract in a small bowl. Stir into the dry ingredients, adding the chopped walnuts at the same time. Mix until just combined - do not overmix.
  • 4. Divide the batter evenly among the 12 muffin cups. Finely chop the walnuts and mix with the brown sugar. Sprinkle on top of each muffin cup.
  • 5. Bake for 20-25 minutes or until a toothpick inserted into the muffin comes out clean. Let cool slightly for 5 minutes before removing them from the pan and serving.
