Savory Sausage Penne image

1 lb penne pasta, cooked & drained
1 can(s) (15 oz.) tomato sauce
1 jar(s) (7 oz.) roasted red peppers, drained
1 medium onion, cut into wedges
1 Tbsp olive oil
2 garlic cloves, peeled
2 Tbsp balsamic vinegar
1 tsp sugar
1 tsp italian seasoning
1/2 tsp ground coriander
1/2 tsp fennel seed
1/4 tsp garlic salt
1 lb bulk italian sausage
1/3 c shredded parmesan cheese
1/4 c fresh basil, minced

Steps:

  • 1. Place the tomato sauce, red peppers, onion, oil, garlic, vinegar, sugar, Italian seasoning, coriander, fennel seed and garlic salt in a food processor; cover and process until blended. Set aside.
  • 2. •In a large skillet, cook sausage over medium heat until no longer pink; drain. Add tomato mixture. Bring to a boil. Reduce heat; simmer, uncovered, for 10-15 minutes or until slightly thickened.
  • 3. Toss pasta with sauce. Sprinkle with cheese and basil.
