Savory Pork Tenderloin image

My husband and I really enjoyed this recipe. It was fast and easy to make, and pairs well with all kinds of seasonal vegetables, rice and/or potatoes.

1.5 to 2 lb pork tenderloin, silver skin removed
2 Tbsp olive oil
2 to 3 Tbsp fresh lemon, lime or orange juice
2 tsp herbs de provence (can substitute italian seasoning)
1 tsp granulated garlic powder
1 tsp cumin
1 tsp kosher salt
1/2 tsp smoked paprika
1/4 tsp black pepper

Steps:

  • 1. Preheat oven to 400F. Lightly oil a large baking pan or casserole dish. Place tenderloin(s) in pan, pierce all over with a fork, and rub olive oil onto all sides.
  • 2. Whisk together: herbs de provence, granulated garlic, cumin, salt, smoked paprika and pepper. Sprinkle all over both sides of the tenderloins, patting it into the meat with your fingers Drizzle citrus juice over the surface of the meat.
  • 3. Bake 25-35 minutes until outside is browned and meat is cooked through. Spoon juice from the pan over the meat, and allow to rest approximately 10 minutes. Slice into 1-inch pieces, garnish with fresh cilantro if desired.
