This is definitely a hearty breakfast that is relatively quick to put together. It makes a great little brunch dish, served with a salad, some spiced juice, and a variety of fresh fruit.

I'm not a fan of cheese, so I omitted it from the recipe. It was still very good.

This was the worst omelet I've ever had. The potatoes were undercooked and the cheese was rubbery.

I'm not a huge fan of omelets, but this one was really good! The potatoes were crispy and the cheese was melted and gooey. I would definitely make this again.
