Saffron Rice Pilaf image

From the "Spice of Life" cookbook. Instead of the boiling water and separate bouillon cubes, you may want to use chicken broth. Great with lamb.

Number Of Ingredients 8

1 cup rice, uncooked
2 cups boiling water
2 chicken bouillon cubes
1 medium onion, chopped
1 tablespoon vegetable oil
1/2 cup currants
1/2 teaspoon curry powder
1/4 teaspoon saffron thread

Steps:

  • Saute onions in oil until golden.
  • Add all other ingredients and simmer covered until all liquid is absorbed, about 12-15 minutes.
  • Serve.
