Rotisserie Grilled Fish image

Number Of Ingredients 5

1 (3 to 4 pound) whole fish, head and tail removed
1/2 stick butter
1 teaspoon parsley
2 cloves garlic, minced
2 tablespoons lemon juice

Steps:

  • Remove backbone, but do not cut fish in half. In a small saucepan over low heat, slowly melt butter with parsley flakes and garlic. Remove from heat, and add lemon juice. Sprinkle inside of fish with salt and pepper, if desired, then brush with butter mixture. Place in basket of rotisserie. Brush outside of fish with butter mixture. Cook in preheated rotisserie till flaky, about 20 minutes, brushing once or twice with butter mixture during cooking period.
