Roasted Red Potatoes image

These tender, tasty potatoes are so simple to make. There's no need to peel them-just slice, season and bake. -Kitty Hernandez, Chicago, Illinois

1 pound small red potatoes
1 tablespoon olive oil
1/2 teaspoon salt
1/8 teaspoon pepper
2 tablespoons grated Parmesan cheese

Steps:

  • Cut the potatoes into 1/4-in.-thick slices; toss with oil. Place in a single layer in a greased 13x9-in. baking pan. Sprinkle with salt, pepper and Parmesan cheese. Cover tightly with foil. Bake at 350° for 40 minutes or until tender.
