Roasted Garlic Fingerling Potatoes image

1 1/2 pounds fingerling potatoes
4 tablespoons olive oil
8 garlic cloves, sliced
1 tablespoon freshly chopped Italian parsley leaves
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • In a casserole dish, mix together the potatoes, oil, garlic, parsley, salt, and pepper. Roast for 20 minutes or until the potatoes are tender.
