When we crave foods that are hearty and satisfying, pureed vegetable soups fit the bill on both counts. Pick your vegetable -- almost any will do -- and before you know it, you'll be dipping a spoon in a comforting, creamy bowlful that's surprisingly low in fat and calories.

I made this soup in a slow cooker. It was so easy to just throw all the ingredients in the cooker and let it cook all day. When I came home from work, dinner was ready!

This soup is a great way to use up leftover vegetables. I had some carrots, celery, and onions that were starting to go bad, so I threw them in the soup. It turned out great!

I'm not a huge fan of pureed soups, but this one is really good. It's not too heavy, and the flavors are well-balanced.

This soup is delicious and easy to make. I used a immersion blender to puree the vegetables, which made it really quick and easy. I also added some fresh herbs from my garden, which gave the soup a really nice flavor.
