Yield makes approx. 9 dozen

Number Of Ingredients 7

1 Cup Shortening
1/2 Cup Butter or Margarine
2 tsp. Baking Ammonia (Ammonium Carbonate)
2 Cups Sugar
2-1/2 Cups Flour
1 Cup Coconut
Powdered Sugar for dusting

Steps:

  • Crush the Ammonium (if not powdered) between two pieces of waxed paper, avoid inhaling. Cream shortening and butter together, add ammonium and sugar. Mix until well blended. Add the flour, a little bit at a time. Stir in coconut. Chill dough in bowl for at least one hour. Preheat oven to 325. Form dough into small balls (about 1 inch big) and place on an ungreased cookie sheet. Bake at 325 for 20-25 minutes, or until lightly brown. Roll on powdered sugar while they are still warm. Enjoy!
