Steps:
- 1. Place potatoes and water in microwave dish. Cover and microwave on high for 4 minutes or until tender. Drain.
- 2. In a large skille tsaute kielbasa and onion in oil until onion is tender.
- 3. Add potatoes and cook 3 - 5 minutes until potatoes and kielbasa are lightly browned.
- 4. Combine brown sugar, vinegar, mustard, thyme, and pepper. Add mix to skillet.
- 5. Bring to a boil then reduce. Cover and simmer for 2 - 3 minutes.
- 6. Add spinach and bacon. Stir until spinach wilts.
