Potato Kielbasa Skillet image

Number Of Ingredients 12

1 pound Red Potatoes (cubed)
3 tablespoons Water
3/4 pound Kielbasa (cut in 1/4 inch slices)
1/2 cup Onion (chopped)
1 tablespoon Olive Oil
2 tablespoons Brown Sugar
2 tablespoons Cider Vinegar
1 tablespoon Dijon Mustard
1/2 teaspoon Thyme (dried)
1/4 teaspoon Pepper
4 cups Baby Spinach (fresh)
5 strips Bacon (cooked and crumbled)

Steps:

  • 1. Place potatoes and water in microwave dish. Cover and microwave on high for 4 minutes or until tender. Drain.
  • 2. In a large skille tsaute kielbasa and onion in oil until onion is tender.
  • 3. Add potatoes and cook 3 - 5 minutes until potatoes and kielbasa are lightly browned.
  • 4. Combine brown sugar, vinegar, mustard, thyme, and pepper. Add mix to skillet.
  • 5. Bring to a boil then reduce. Cover and simmer for 2 - 3 minutes.
  • 6. Add spinach and bacon. Stir until spinach wilts.
