Pork Chop Casserole image

This was my favorite recipe that my mother-in-law, Gilberte Croteau made. It goes great with mashed potatoes and a salad.

Number Of Ingredients 10

6 pork chops
1/2 c minced onions
1 clove garlic, minced
1 Tbsp brown sugar
1/2 tsp dry mustard
2 can(s) red kidney beans, drained
2 can(s) lima beans, drained
1/2 c ketchup
2 Tbsp apple cider vinegar
salt and pepper to taste.

Steps:

  • 1. Brown chops in frying pan. Remove from pan and set aside, add onion and garlic to pan. Saute for about 5 minutes until brown. Add onions to the rest of the ingredients in a large casserole dish. Mix well, then place browned pork chops on top of bean mixture. Cover and bake in 350 degree oven for about 45 minutes or until done.
  • 2. I use tenderizer on the chops and set in the refrigerator for at least a few hours before I cook them.
