Pineapple Dream Cake (no bake) image

This is an old recipe of my mothers, it is not like any other Pineapple Dream cake I have seen. It is always a hit at potlucks. I will take a picture next time I make it.

Number Of Ingredients 6

3/4 c butter (divided)
2 1/3 c graham cracker crumbs
2 c confectioners' sugar
1 Tbsp pineapple juice
2 c whipping cream
1 c crushed pineapples (well drained)

Steps:

  • 1. 1st Layer. Melt 1/2 cup of butter and mix with graham wafer crumbs. Press into 9 1/2 X 12 inch pan. Place in refrigerator or freezer.
  • 2. 2nd Layer. Mix together 1/4 cup of soft butter with confectioners sugar and pineapple juice (enough juice to make a soft icing). Spread over 2nd layer (this can be trying), place back in refrigerator.
  • 3. 3rd layer. Whip the cream until stiff then fold in the pineapples, spread over 2nd layer. Keep refrigerated, enjoy This is easier to cut when it has been left out for a short time.
