Picadillo image

This is a very easy recipe that uses ingredients that you normally have in your pantry.Wonderful served with rice and hot flour tortillas. This photo is from allFavoriteRecipes.com

Number Of Ingredients 14

1 1/2 lb ground beef
1/2 tsp salt
1 tsp black pepper
1 tsp oregano
1 tsp cumin
4 clove garlic, minced
1 medium onion, diced
1 medium jalapeno pepper, diced
1 Tbsp all purpose flour
1/2 c beef stock
1 can(s) (15 oz) diced tomatoes
2 medium potatoes (peeled and diced)
1 1/4 c green or black olives, chopped
oil for sauteing

Steps:

  • 1. Place the ground beef in a mixing bowl. Add salt, pepper, oregano and cumin. Combine thoroughly. Set aside.
  • 2. Heat the oil in a frying pan and saute the onions, jalapeno pepper and garlic until soft.
  • 3. Crumble the ground beef mixture into the onion mixture and cook until the meat is slightly brown. Add the flour to the ,ixture and stir until flour is combined well.
  • 4. Add the beef stock, tomato sauce and potatoes. Stir well, cover and cook on medium-low heat for another 20 minutes.
  • 5. Uncover, add olives, if using. Cook, uncovered, another 15 minutes or until liquid has reduced but meat is still moist.
  • 6. Add more salt and pepper if needed.
  • 7. Serve hot with refried beans, rice, your favorite salsa and hot flour tortillas. Also great for making burritos or empenadas.
