PECAN CRUSTED CHICKEN

Pecan Crusted Chicken image

Number Of Ingredients 10

4 chicken breast halves, skinless and boneless
2 egg whites
2 tsp cornstarch
2 Tbsp lemon juice, fresh
1 c panko bread crumbs
1 Tbsp parsley
2 tsp kosher salt
1/4 tsp pepper
zest of 1 lemon
1 c pecans, crushed

Steps:

  • 1. Preheat oven to 450.
  • 2. Blend egg whites, cornstarch and lemon (dipping mixture).
  • 3. Combine remaining ingredients (crusting mixture).
  • 4. Dip chicken breast in dipping mixture and then in crusting mixture.
  • 5. Saute chicken in oil in a skillet over medium-high heat until golden brown and crisp.
  • 6. Turn and brown on other side place on sheet pan and roast in oven until done about 8 minutes.
  • 7. Test with meat thermometer until 165 degrees.
