Really nice peach upside cake, gooey brown sugar on top, peaches, very peachy tasting cake with a little kick of fresh ginger, and best of all, NO OIL!!!!! You know you wanna try it, so come on, let's go, it's one big hunk of peachy. gingery, cakie goodness!!!!

Steps:
- 1. Preheat oven to 325, butter a 9X9 baking pan (you can use whatever size you choose).
- 2. Sprinkle brown sugar evenly over the bottom of cake pan and pat down flat
- 3. Drain and reserve juice, add peaches, in rows to cover the entire bottom of pan and place a cherry between each peach slice
- 4. Remove pit from fresh peach, do not peel, put it, remaining peaches from can (if there are any) and reserved juice in food processor and blend into a slurry.
- 5. ****Important, do not follow cake directions on box**** Add peach slurry, ginger, 3 eggs and dry cake mix in bowl and blend till smooth.
- 6. Pour into pan over peaches and bake at 325 for 35 min, cover with foil sprayed with cooking spray (so as not to stick) continue baking till set (up to around 30min more).
- 7. Remove from oven and let cool for 30 min, invert onto flat covetable surface. Enjoy!!!
