Provided by RHagan

Number Of Ingredients 14

2 cups elbow macaroni
2 1/2 quarts boiling water
1 tbsp cooking oil (optional)
salt
1/2 cup chopped onion
1/3 cup butter or margarine
3 tbsp all-purpose flour
1/2 tsp salt
1/8 tsp pepper
1/4 tsp paprika
2 1/4 cups milk
2 cups grated medium cheddar cheese
1/2 cup dry bread crumbs
2 tbsp butter or margarine, melted

Steps:

  • In large uncovered saucepan cook macaroni in boiling water, cooking oil and first amount of salt until tender but firm, about 5 to 7 minutes. Drain. Sauté onion in butter in large saucepan until clear and soft. Sprinkle onion with flour, second amount of salt, pepper and paprika. Mix. Stir in milk and cheese until it boils and thickens and cheese melts. Add macaroni. Stir. Turn into greased 2 quart (2L) casserole. This may be baked uncovered at this point without the topping. To bake with the topping, mix bread crumbs with melted butter, scatter over top and bake uncovered in 350°F (180°C) oven for about 30 minutes until hot. Serves 4 to 6.
