- 1. Heat oven to 375 degrees. Mix mayo and buttermilk together in a large bowl. Add the potatoes to the mayo mixture and mix with your hands to coat the wedges well. In a seperate bowl, mix the remaining ingredients, adding salt and pepper to desired taste. Dredge the potato wedges in the bread crumb mixture and bake on a lightly greased baking sheet for approx. 45 minutes.
