Opal's Cherry Surprise image

I don't know where my mom got this recipe, but she has been making it for over 50 years, hence that's why I named it Opal's Surprise, after my mom..

Number Of Ingredients 7

CRUST
3 egg whites beaten stiff
1 c. sugar, add to beaten egg whites
fold in 12 crushed soda crackers
½ c. nuts
1 t. vanilla
1 t. vinegar

Steps:

  • 1. Crust:Pour in greased large pan. Bake at 350 for 30 minutes. Cool. Don't worry when the crust falls.
  • 2. Filling: 1/2 pint heavy whipping cream 1 (3 oz) Cream cheese softened at room temperature 1 c. sifted powdered sugar 1 t. Vanilla
  • 3. Using a mixer, whip the cream cheese. Then add the sifted powdered sugar and heavy whipping cream alternately a little at a time until thick. Before you have added all the powdered sugar to the cream sugar, add the vanilla. Do not beat the ingredients too long or you will make butter. Pour the filling on top of the cracker crust.
  • 4. Then top with Cherry Pie Filling..
