Onion Barley Casserole image

This is super easy to make and my kids just love it!

Number Of Ingredients 7

1/2 c medium pearl barley
1 Tbsp vegetable oil, (i prefer olive oil)
1 1/2 c water
1 tsp beef bouillon granules
1/4 tsp salt
1/2 c sliced green onions
1 can(s) (4 ounces) whole button mushrooms, drained

Steps:

  • 1. In an ovenproof skillet, saute the barley in the oil until golden brown. Stir in water, bouillon and salt; bring to a boil.
  • 2. Remove from heat; add onions and mushrooms. Cover and bake at 350 for 40-50 minutes or until the barley is tender.
