Steps:
- Beat the butter and suagr until very light and creamy.
- Add well-beaten egg yolks.
- Sift flour twice with salt and baking powder.
- Add to creamed mixture alternately with milk (a little at a time), beginning and ending with the dry ingredients.
- Add vanilla.
- Fold in stiffly beaten egg whites.
- Put batter into three greased and floured 9-inch layer pans.
- Bake at 350 degrees for 30 minutes.
- After ten minutes cooling in the pan, remove them to wire racks to cool completely.
- Fill and frost as desired.
- Variation: 1 1/2 cups buttermilk and 1 teaspoon baking soda may be substituted for the sweet milk.
