Steps:
- Heat the oven to 350 degrees. Purée the peaches in a blender or food processor. In a small bowl, stir the baking soda into the puréed peaches (this will cause them to foam). Set aside. In a large bowl, cream the butter with the sugar. When the mixture is smooth, add the eggs, one at a time, and then the vanilla extract. In a medium bowl, sift together the flour and salt. Stir in the rollled oats. Alternately add the flour mixture and the peach purée to the creamed butter and egg mixture. Stir until the ingredients are blended. Fill greased muffin tins. Bake for 20 to 25 minutes or until a tester inserted into a muffin comes out clean.
