No Fuss Mandarin Orange Cake w/ Vanilla Coconut Frosting image

There are a number of recipes out there for this cake but, frankly, I don't care for the pineapple-vanilla pudding frosting. Coconut is much more my style! Plus, the cake is moist enough without the pudding on top.

I'm not sure what went wrong, but my cake didn't rise properly. It's still edible, but it's not as light and fluffy as it should be.

I'm not a fan of mandarin oranges, so I used pineapple instead. The cake turned out great!

This cake is a bit too sweet for my taste, but it's still good. I think I'll try using less sugar next time.

I followed the recipe exactly, but my cake didn't turn out as moist as I expected. I'm not sure what I did wrong.

I made this cake for my daughter's birthday party, and it was a huge success. The kids loved the bright orange color and the sweet citrusy flavor.

This cake is so easy to make, and it's always a crowd-pleaser. I love that I can use canned mandarin oranges, so I don't have to worry about peeling and segmenting fresh oranges.

I'm not a huge fan of coconut, but this frosting was surprisingly good. It's light and fluffy, and it doesn't overpower the orange flavor of the cake.

This cake was a hit at my last party! The citrusy flavor of the mandarin oranges pairs perfectly with the coconut frosting, and the cake itself is moist and fluffy. I'll definitely be making this again.
