5 medium size garden tomatoes, diced
1 medium red onion, chopped
1 garlic clove, put through a press
3/4 cup shredded fresh basil
1 cup chopped parsley
1/2 cup coarsely crumbled feta cheese
3 tablespoons extra virgin olive oil
2 teaspoons balsamic vinegar
1/4 cup chopped oil-cured black olives
Salt and pepper to taste

Steps:

  • Combine all ingredients. Serve warm, cold or at room temperature over your favorite pasta.
