1/4 cup butter or margarine, softened
1/2 teaspoon vanilla
1 2/3 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt

1 tablespoon plus 1 to 2 teaspoons milk
1/4 teaspoon almond extract or vanilla
Betty Crocker™ gel food color, if desired

I'm not a big fan of mint, but I decided to give this recipe a try anyway. I was pleasantly surprised! The mint flavor is actually very subtle, and the cookies are so delicious.

These cookies were a bit too sweet for my taste, but my kids loved them. I think I'll try reducing the amount of sugar next time.
