I love Tex-Mex food and this recipe is no exception. It has all the classic flavors of Tex-Mex cuisine, but with a unique twist. The elote is grilled instead of boiled, which gives it a nice smoky flavor.

The combination of flavors in this recipe is incredible. The sweetness of the corn, the smokiness of the chili powder, the tanginess of the lime juice, and the creaminess of the mayonnaise all come together to create a truly unforgettable dish.

I'm trying to eat healthier, so I made a few modifications to the recipe. I used Greek yogurt instead of mayonnaise and reduced the amount of butter. It still tasted great and I felt good about eating it.

I'm not a big meat eater, so I substituted the cotija cheese with crumbled tofu. It turned out great! The tofu added a nice protein boost without taking away from the overall flavor.

I love spicy food, so I added a bit of cayenne pepper to the mayonnaise mixture. It gave the elote a nice kick without being too overpowering. Yum!
