Overall, I really enjoyed this recipe. The vegetables were roasted to perfection and the flavors were very well-balanced. I will definitely be making this again!

This recipe was a bit too time-consuming for me. I had to chop all the vegetables and then roast them for over an hour. I would recommend using pre-cut vegetables or roasting the vegetables at a higher temperature to save time.

This recipe is a great way to use up leftover vegetables. I had some zucchini, eggplant, and bell peppers that were about to go bad, so I threw them all in this recipe and it turned out great!

This recipe was a bit bland for my taste. I would recommend adding more spices or herbs next time.

I didn't have any zucchini on hand, so I used extra eggplant instead. It turned out great!

The vegetables in this recipe were a bit too oily for my taste. I would recommend using less olive oil next time.
