Steps:
- Melt butter in a saucepan. Add chopped onions, pinch of salt, and pepper to taste. Sauté on medium heat until soft and starting to brown (soft gold), stirring occasionally. Add maple syrup, turn heat to low/medium-low, stirring occasionally, about 15 minutes. Add red wine vinegar. Let cook on medium-low until onions become jammy and are a nice deep gold-brown color, about 30 minutes.
