This is a recipe my daughter invented for a vegetable tray for a a family get together. We loved them so much, I had to get the recipe. The measurements are approximate, you can change it around to fit your tastes.

Steps:
- 1. Take peppers and core them, cleaning them out. Then wash them and cut them into fourths length wise, making them like scoops.
- 2. In a bowl, mix salsa and sour cream. Add spices. Mix in cheese. If mixture is too runny, you can add additional shredded cheese to thicken.
- 3. Fill each pepper scoop with filling. Refrigerate util ready to serve. When placing on plate or tray, alternate pepper colors for a colorful addition to any veggie tray.
