Mandarin Beef Stir-Fry image

This colorful stir-fry from Anne Drouin of Dunnville, Ontario is pretty enough to double as a centerpiece. "The crispy veggies contrast nicely with the tender beef and juicy oranges," she informs. "Even the most finicky eaters in our family can't resist it."

I had some trouble finding Mandarin oranges, so I used canned mandarin oranges instead. The dish still turned out great, but I would recommend using fresh oranges if you can find them.

I'm not sure what went wrong, but my dish turned out really dry. I think I may have overcooked the beef.
