LIME JALAPEÑO SHRIMP image

1 jalapeño seeded, and chopped
3 tbs. olive oil
1 tsp. lime juice
5 tbs. lime juice
6 garlic cloves, minced
1/2 tsp. cumin
1/4 tsp. cayenne pepper
1/2 tsp. salt
1 1/2 lbs. shrimp, peeled and deviened
1/2 tsp. sugar
3 tbs. cilantro

Steps:

  • Make a marinade: combine jalapeño, olive oil, lime juice and rind, cumin, garlic, cayenne, and salt in a blender and process until smooth. Reserve 2 tbs. Transfer to a medium bowl and toss with shrimp. Let sit in refrigerator for 1 hour. Hear grill to high heat. Add sugar to shrimp, them place on grill, cook for 3 minutes per side. remove shrimp to a bowl and toss with reserved marinade and cilantro. Serve
