LENTIL-SAUSAGE CASSEROLE image

2 turkey sausage, links, Italian-style
1 teaspoon olive oil
1 onion, chopped
19 ounce lentil soup, canned
2 cup spinach, quick-frozen
1 teaspoon dried oregano leaves
1/2 cup converted white rice, uncooked
1/4 teaspoon freshly ground black pepper, or to taste
1/2 cup extra-sharp Cheddar cheese, grated

Steps:

  • 1. Preheat oven to 400 degrees F (205 degrees C). Remove casings from sausage and crumble with a fork. 2. In a skillet, heat oil over medium heat. Add sausage and onions; cook, stirring, until onions soften, about 5 minutes. Add soup, spinach and oregano; heat through. Add rice. Season with pepper. 3. Transfer to a lightly oiled baking dish; cover with foil. Bake casserole for 35 minutes, or until rice is tender. Top with cheese. Bake uncovered for a few minutes to melt cheese
