Lemon Orzo Primavera image

Colorful vegetables and the flavors of lemon and thyme make this orzo dish great for picnics. You can chop the zucchini and carrot instead of grating them to cut down on prep time, just be sure to cook them for a few minutes longer before adding the orzo.

I was disappointed with this recipe. The sauce was too thin and the vegetables were overcooked. I would not recommend this recipe.

This recipe was a bit too bland for my taste. I added some extra lemon juice and garlic, which helped to improve the flavor. Next time, I'll try using a different type of cheese, such as Parmesan or Romano.

Overall, this was a good recipe. The sauce was creamy and flavorful, and the vegetables were cooked perfectly. I would have liked a bit more lemon flavor, but that's just personal preference.
