Leftover Mashed Potatoes Reinvented image

I made this up last night for dinner. It was amazing. You can use any finely chopped onion or onion flakes. You can also change up the cheese.

Number Of Ingredients 6

2 -3 cups leftover mashed potatoes (well seasoned)
1 egg, well beaten
1 -2 green onion, finely sliced
1/2 packet ranch salad dressing, powder
1 cup grated cheddar cheese
4 slices bacon, cooked and chopped

Steps:

  • Combine all ingredients.
  • Place in an oven proof dish and bake at 350 for 30 minute.
