Leeks Braised In White Wine image

Number Of Ingredients 6

8 medium-size leeks, about 2 pounds before trimming
1 cup white wine
3/4 cup water
1/4 cup olive oil
1 tablespoon Dijon-style mustard
Pinch freshly ground black pepper, or to taste

Steps:

  • To clean leeks, trim stalks, leaving whites and 1 inch of green. Cut off tough root ends and deeply score the bottoms. Rinse and soak in cold water, changing the water several times.
  • Arrange leeks, alternating white and green ends, in a single layer on the bottom of a 5-quart casserole with a tight-fitting lid. Pour wine and water over leeks. Cook, covered, at 100 percent power in a high-power microwave oven for 20 minutes.
  • Remove from oven and uncover. Turn leeks over and return to oven. Cook, uncovered, 20 minutes.
  • Transfer leeks to individual plates or a platter. Pour cooking juices into a small bowl and whisk in oil, mustard and pepper. Spoon a scant tablespoon of sauce over each leek.
