This chili is a great way to use up leftover meat and vegetables. It's also a great way to get your kids to eat their vegetables.

This chili is a great freezer meal. I often make a big batch and freeze it in individual portions. Then, I can just heat up a portion whenever I want a quick and easy meal.

I've made this chili in the slow cooker and on the stovetop. Both methods work well, but I prefer the slow cooker because it gives the flavors more time to develop.

This chili is a bit spicy, so if you don't like heat, you can reduce the amount of chipotle peppers. You can also add a dollop of sour cream or yogurt to cool it down.

I like to serve this chili with all the fixings: sour cream, shredded cheese, chopped onions, and jalapeƱos. It's also great with a side of cornbread or crackers.
