Jiffy Creamed Corn Casserole image

I got this recipe from my sister-in-law many years ago. It is quite tasty and super easy. I like to make this dish around the holidays. I've seen different versions of this recipe floating around but I prefer this one. If you want to jazz it up you can add cheese or jalapenos. The possibilities are endless.

Number Of Ingredients 6

1 box jiffy corn muffin mix
2 can(s) creamed corn
1 large egg
8 oz light sour cream
1/2 stick (4 oz) butter, softened to room temp
salt and pepper to taste

Steps:

  • 1. Preheat the oven to 375 degrees. Grease a 9x9 inch or 9x13 inch casserole dish.
  • 2. Place all the ingredients in a bowl. Mix well.
  • 3. Place in the casserole dish. Cook for 50 min to an 1 hour for a 9x9 dish size. Cook a little less for a 9x13 dish. The casserole will be golden on top and a bit soft.
