Categories     Beef     Bake     Kid-Friendly

Yield 6 people

Number Of Ingredients 10

2 lbs. ground beef or turkey
½ cup ketchup
½ grated onion
1 cup parmesan cheese
2 eggs
½ cup brown sugar
¾ cup bread crumbs
garlic salt
lots of pepper
6-7 slices of bacon (optional)

Steps:

  • Preheat oven to 350 degrees. In a bowl, combine all of the ingredients, except the bacon. Mush the meat mixture with your hands. My weird way to tell if the meatloaf is ready for the oven is that I actually smell the mixture to see if it has enough seasoning. If it doesn't smell like ground beef, you're good to go. Shape in the form of a loaf and place in baking dish. Smother with ketchup and drape bacon slices over the top. Bake at 350 degrees for 45 minutes to an hour.

This meatloaf is a great way to use up leftover vegetables. I added some chopped carrots and celery to mine and it turned out great!

I found this meatloaf to be a bit dry. I think it would be better if it were cooked in a covered dish.

This meatloaf was a bit too sweet for my taste, but it was still very good. I would recommend reducing the amount of brown sugar in the glaze next time.
