ITALIAN CHILI image

Yield 6-8 servings

Number Of Ingredients 16

2 tbsp. oil
1 cup chopped onion
1 cup chopped fennel bulb
1 fresh red chili pepper, seeded and minced
1 pound hot Italian sausage, crumbled
1.5 pound chicken thighs, rinsed, patted dry and cut into 1" chunks
1 3/4 cup chicken broth
1 cup crushed tomatoes
1/4 cup tomato paste
1 tbsp balsamic vinegar
1 tbsp dried oregano
1 tbsp dried cumin
1 1/2 cup fresh or frozen corn
4 ripe plum tomatoes, halved and coursely chopped
1/4 cup fresh basil, chopped
sour cream

Steps:

  • Heat oil in large pot, add onion, fennel, chili and cook stirring over medium heat approx. 5 minutes. Add sausage and chicken, cook stirring occasionally until cooked. Tilt pot and spoon off all but 2 tbsp fat. Stir the stock, crushed tomatoes, tomato paste, vinegar, oregano and cumin. Bring to boil, then reduce heat and simmer partially covered for 30 minutes. Stir in corn, fresh tomatoes and basil. Cook 5 minutes. Serve with a dollop of sour cream.
