This recipe is a great way to use up leftover chicken. I had some cooked chicken in the fridge and this recipe was the perfect way to use it up.

I'm a vegetarian, so I used tofu instead of chicken. The recipe turned out great and the tofu was very flavorful.

I'm allergic to peppers, so I substituted bell peppers for the jalapeños. The chicken was still delicious.

This recipe was a bit bland for my taste. I think I'll add some more herbs and spices next time.

I made this recipe last night and it was a bit too spicy for my taste. I think I'll try it again with less chili powder next time.
