HEARTS OF PALM SALAD image

Number Of Ingredients 8

2 cans hearts of palm, rinsed & drained
1 cup toasted chopped walnuts or pecans
1/3 cup toasted pine nuts
2-3 cloves minced garlic
1 cup chopped fresh basil
1/4 cup light olive oil, extra virgin is too strong
1 cup shredded parmesan
salt & ground pepper to taste

Steps:

  • Heat garlic & olive oil together in microwave, cool 5 min. Slice each heart down middle lengthwise then in 1/2 inch chunks & mix with oil. Add toasted nuts then chopped basil, then mix. Add parmesan. Mix all ingredients well then salt & pepper to taste. Some parmesan is saltier so add salt sparingly.Chill about 1 hour, serve over baby greens if desired.
