HAWAIIAN OATMEAL COOKIES image

Yield makes 60-80 cookies, depending on size.

Number Of Ingredients 11

1 c granulated sugar
1 c firmly packed brown sugar
1 c butter (softened)
2 large eggs
1 tsp pure vanilla extract
1 tsp salt
1 tsp baking soda
2 tsp baking powder
2 cups + 2 tbsp flour
2 cups rolled oats (quick or old fashioned)
2 cups sweetedned flaked coconut

Steps:

  • Preheat your oven to 375 defrees F. Cream together the butter and sugar. Blend in the eggs, vanilla and salt. In a seperate bowl stir together the baking soda, baking powder and flour. Mix into the wet ingredients until blended. Add the oats and coconut just until combined. Place walnut sized balls onto an ungreased cookie sheet, 2 inches apart, and flatten slightly with a fork dipped in water. Bake in 375 degree oven for about 11-13 minutes (until the cookies are light golden brown around the edges). Enjoy!
