I happen to like beets, but many in my circle of friends don't, so I usually keep this recipe just for myself & a few guests who don't mind a taste-experiment! It comes from the 1967 'so good with FRUIT' cookbook from Better Homes and Gardens.

This was my first time cooking Hawaiian food and I'm so glad I tried this recipe! The beets were roasted to perfection and the coconut milk and ginger sauce was delicious. I will definitely be making this again.

This recipe is a bit time-consuming, but it's worth the effort. The beets are roasted until they're caramelized and the coconut milk and ginger sauce is so flavorful. I served this dish with grilled fish and it was a perfect meal.

I'm not a fan of ginger, so I omitted it from the sauce. The beets were still delicious and the sauce was creamy and flavorful.

This recipe was a total flop! The beets were tough and the coconut milk and ginger sauce was bland. I don't recommend this recipe.

The beets in this recipe were a little too sweet for my taste, but the coconut milk and ginger sauce was amazing! I'll definitely be using that sauce again in other recipes.
